Fontina, Fennel, and Onion Pizza

{Ingredients}
1/2 cup onions and fennel
Cubed fontina cheese (as much or little as you like)
Basic boxed pizza dough
Truffle oil
Penzey's Sunny Spain spice mix
Butter

{Directions}
(1) Caramelize the onions and fennel on medium heat with a tablespoon of truffle oil and a bit of butter
(2) Prepare your pizza dough based on the box directions (we use boxed pizza dough to save time, but there are fabulous pizza dough recipes out there to try when you have more time.)
(3) Top your pizza dough with your caramelized onion and fennel mixture, spread your cheese on top, and sprinkle with Penzey's Sunny Spain spice mix.
(4) Bake according to your pizza dough directions.
