My husband is not Catholic but he so kindly made me a meat-free dinner last Friday, and it was delicious! Of course, in the middle of preparing our meal I get a call from my cousin, David, and his wife, Jeanne, describing their incredible anniversary meal complete with filet and duck! Yum. Regardless, the scallops my husband prepared were fantastic.

Ashley, I will have to tell my husband about this. He is from Missouri and claims he 'must' have meat with each meal because he is mid-western. Sounds like he is a little stinker who has been pulling my leg. Ha!
